Chef Gregor
When a person thinks of cutting edge cuisine in British Columbia they often think of high-end restaurants in the lower mainland, or funky bistros in Nelson, but usually not the Cariboo. That's about to change. In the heart of the Cariboo, at the end of the road and in the middle of nowhere, is a five-star restaurant at Elysia Resort on Quesnel Lake serving fresh and locally raised food, often organic, whenever possible.
Chef Gregor, the chef at Elysia Resort, has brought the resort's restaurant up a notch. Fresh out of chef school, Greg has brought an amazing array of dishes to the central interior of British Columbia since 2005. His ability to experiment with, and mix unusual flavors sets him apart from the norm. He also maintains and harvests his own organic garden, right on the resort property. You will often see him running out the back door of the kitchen to pluck something for the meal he is preparing.
Now, again in 2007, Greg will be sourcing out local and organic products whenever possible, including 4H Lamb and locally raised, hormone free, government inspected beef.
Greg has also vastly improved Elysia’s wine list and brought in some wonderful wines from around the world to pair with his amazing creations.
Bon Appetit!
What one guest, a Senator from Oregon, had to say:
"I have had the good fortune of eating in fine restaurants around the world, and I would rate Chef Gregor's food and presentation right at the top! Excellent food in an exceptional setting." - Frank Morse
Cooking Your Catch
The fish caught in Quesnel Lake are considered to be some of the sweetest and tastiest fish anywhere, due to the clean, clear, deep water that they swim and eat in. If you like eating your catch, Elysia Resort would be happy to cook it for you in an array of different ways!
Or, they can smoke your catch so you can take it home and share some of the memories... and, it's oh so good!
Gourmet Picnic Lunches
Bottom line, Elysia Resort makes awesome lunches. If you are on any of the plans or packages, they custom make your lunches every morning, in order for you to take it with you on your all-day adventure. Your lunch consists of pop or juice, coffee or tea, water, a morning snack, fruit, an afternoon snack, and a Dagwood-like sandwich, thick with your choice of meats, veggies and cheese.

| Fishing Information |
From diverse still waters to Sockeye salmon creeks and rivers, the exceptionally beautiful and unique Quesnel Lake ecosystem offers Rainbow trout angling that is unparalleled anywhere in British Columbia.
Forged by glaciers, Quesnel Lake is the deepest freshwater fjord in the world (over 2000 feet deep). Fed by numerous creeks and two major rivers, it is the nursery that hosts the offspring of millions of Sockeye salmon, providing the ingredients for truly spectacular angling for a genetically pure strain of slow maturing trout. While Rainbows are primary targets, Bull trout, Lake trout, Kokanee and white fish are also in abundance.
Great fly fishing is not limited to the lake and feeder creeks. Numerous small still waters abound in the region as well as three world-class rivers. Spin casting and trolling are also common angling methods.

Sample Itinerary
Day 1. Begin your journey at the Williams Lake Airport or Train Station. Take an easy 1½ hour shuttle east to Quesnel Lake via the town of Horsefly. Arrive in time to relax in the hot tub before enjoying a gourmet dinner in the panoramic dining room. Fall asleep to the hauntingly, restful sound of the loons.
Day 2. After beginning your day with a scrumptious breakfast, enjoy a two-hour back-road journey along the Horsefly River and West Arm of Quesnel Lake to a jet boat location at historic Quesnel Forks. Here you can relive the gold rush of the largest town north of San Francisco in the mid 1800s. Experience the excitement of a jet boat trip down the white waters of Quesnel River to Quesnel River Lodge, the homestead of Quesnel Hydraulic Gold Mine and Town site. You can also be assured of a fun and exciting ride to the hot fishing spots. Sit by the 24-foot tall river-rock fireplace and eat a hearty home cooked lunch. Learn about the history of this historic town site developed in the early 1900s.
After returning to the resort, enjoy a soak in the tub or canoe ride before enjoying dinner and a cocktail on the patio.
Day 3. Start your morning with a hearty breakfast, before trekking up to the playground area for one hour of optional instruction with your guide on the art of fly casting. Then, by boat, you will follow beautiful sandy beaches of the North Arm while bucktailing and casting for wild rainbow trout. If it is big rainbows or big Bull Trout you hunger for, Elysia should be your destination. You will also find ample opportunity to observe Giant Ancient Cedar Rain Forests and long sandy beaches while keeping your eyes open for wildlife. Time will be provided for you to have a tasty picnic lunch on the shore.
Once back at the resort, relax and unwind, or enjoy a short canoe ride before heading to the lodge for dinner and a sunset.
Day 4. Wake up to a wholesome breakfast and grab your camera for this spectacular boat ride and fishing adventure up the rocky shores of the East Arm. Search for mountain goats along the rocky cliffs and see natural wonders such as Elysia’s very own 200-foot Niagara Falls. Here at the falls you will enjoy a delicious and hot shore lunch.
Back at the resort, enjoy a game of horseshoes or badminton, or simply relax in one of the outdoor hammocks. Mosey over to the lodge to enjoy one of the chef’s daily features and a bottle of wine.
Day 5. Have a final Elysia Resort breakfast, say “so long” to new friends, and then be taken to the Airport or Train Station for your trip home.
